Carlos Capparelli worked as executive chef of the Ottolenghi restaurant group in London before moving to Belfast recently. We're thrilled to be working with Carlos as he launches his pasta dishes, a welcome addition to Belfast's food scene.

Aubergine Parmigiana is a vegetable casserole dish made by layering sliced aubergine, tomato sauce, mozzarella cheese, parmigiano cheese and basil, really capturing summery Mediterranean flavours.

Made with high quality ingredients, simply pop the lasagne in the oven for 45 minutes and you've got yourself a tasty meal with no additives and no fuss.
